Recipes to Share: Ukoy

Ukoy is really popular for Filipinos. This crispy food can be seen from peddlers selling around town or near schools and offices.

Ingredients:
1/2 kg small shrimps
1/4 kg sprouted mung beans
3 cups flour
2 cups water
salt
pepper

Procedure:
1. Clean the shrimps thoroughly and remove the head (contains a lot of cholesterol), and its tiny feet.



2. Wash the sprouted mung beans well to remove dirt and then make the batter using 3 cups of flour mixed with 2 cups of water. Adjust the amount of water whether you want the ukoy to be crispy or chewey. Also add a little salt and pepper.

3. Sauté the shrimps over low heat with a drizzle of oil. When the shrimps turn orange, it's time to combine them with the batter.
 

4. Using a wooden spoon or a big spoon, scoop the batter with shrimp until the spoon and pour it slowly on the wok forming semi-circle shaped fritters and deep-fry it over medium heat.


5. Fry the fritters until golden brown. This snack is best served with cold drinks and a dip of your choice.
