There are so many ways to make Potato Salad. This time, I used Lettuce and it was really good! The combination of potato, lettuce, mayo and toasted garlic really gave that delicious meaty taste even there was no meat :)
Ingredients:
1 kg marble potatoes, washed and cleaned
2 medium-sized iceberg lettuce sliced into quarters
450 g mayonnaise
1 tbsp white sugar
1 tsp dry basil leaves
8 cloves of garlic, chopped and toasted until golden brown
a pinch of salt
pepper
Procedure:
1. Boil potatoes with salt until tender but not too soft. Let it cool for a while after boiling.
2. In a bowl, add potatoes and mayonnaise. Mix until all potatoes are well-coated with mayonnaise.
3. Add sugar, salt and pepper to taste.
4. Add basil leaves and toasted garlic then mix well.
5. Lastly, add lettuce and finally mix until all ingredients incorporate. Refrigerate before serving.
