The Big Coconut: Cucumber Salad


     Wheeew!!~  This is totally a busy week for me, sorry I wasn't able to post anything for these past few days. It's been work work work and when I got home, I also had some things to do before I sleep. I guess that's part of being an adult. You get to do everything first before relaxing and sometimes even when you are too lazy to do it, you still must force yourself to do so. Yes it can be stressful and at times all you need is a cup of your favorite ice cream or a plate of your favorite dish - like me, when I'm stressed I just eat.

     Have you thought about a certain dish that's very relaxing and yet healthy for your skin? Well, cucumbers really work like wonders! Cucumbers contain Vitamin B1, B5 and B7 that can help relief anxiety and can reduce the damaging effects of stress. They also contain anti-cancer properties; can prevent bad breath and can refresh your skin right away. Actually there's more to it than what I've mentioned now and for me this is one of the most healthiest snack to eat.

     Prepare the salad by slicing the cucumber into thin discs or you can slice it in half and produce "C's" You also remove the seeds if you want, but personally, I remove the seeds. What  I usually do is rub them on my face before bathing or washing. The juice on the seeds are really refreshing and it can reduce fine lines. So after slicing the cucumber, put them in the bowl and drizzle a few amount of vinegar. If you are too conscious about your health, you could try using Apple Cider Vinegar - now that's very healthy! : ) After the adding vinegar, add a teaspoon or two of sugar. Mix well and let it chill in the fridge about half an hour before serving them. Believe me, it's a healthy snack and you can even use it as a side dish for those heavy meals.
