Recipes to Share: Lemon Square

 

Ingredients:
2 cups flour
1 cup butter
1/2 cup confectioners' sugar
4 eggs
4 tsp grated lemon rind
6 tbsp lemon juice
1 tsp baking powder

Procedure:
1. Sift flour.

2. In a bowl, add together flour, eggs, and confectioners' sugar.
 

3. Use a mixer to mix flour, eggs, and confectioners' sugar.
 

4. After it's completely mixed, press on the bottom of a prepared pan and bake 20 minutes until golden brown. While the crust is baking, prepare eggs.
 

5. Beat the eggs. then add the sugar.

6. Add the grated lemon rind.
 

7. Add lemon juice and baking soda.

8. Mix well. Make sure there are no lumps.
 

9. After the mixture is well-incorporate, pour over baked crust and bake for 20 minutes more or until the mixture sets. Cool then dust with confectioners' sugar. Cut into squares.

Enjoy eating! I really had fun making my first pastry with Mom : ) and it's a success. Mom definitely knows everything about baking.
