Ingredients:
3 kg chicken thighs
2 cans 240ml orange juice
3/4 cups pineapple juice
1/4 cup cornstarch
4 pcs oranges
1 tbsp dried basil leaves
5-6 garlic cloves (minced)
1 pc medium sized onion (sliced)
salt
pepper
sugar
Procedure:
1. Marinade chicken with salt and pepper overnight. In a wok, deep-fry chicken over medium heat, until golden brown.
2. In a medium bowl, add orange juice and pineapple juice. Add sugar to adjust the taste of the juice if you want it a bit sweet.
3. Add the minced garlic and sliced onion.
3. Add the cornstarch. Stir well until combined.
4. Add the dried basil leaves, then set aside.
5. Wash oranges, then grate orange rinds about 1/4 cup full.
6. Slice oranges into thin discs.
7. Add the grated orange rinds into the bowl. Stir well until combined.
8. In a wok, add the orange mixture and cook over medium heat.
9. When the orange mixture is getting sticky, add the orange slices.
10. Let it simmer for about 2 minutes. You may add salt, pepper, and sugar to taste. Then add the chicken.
This food is best served with warm rice. Enjoy!
