Recipes to Share: Blueberry Muffins


Ingredients:
2 1/2 cups cake flour
1 cup sugar
1 1/2 tbps baking powder
1/2 tsp salt
1 cup oil
1 1/3 cups buttermilk
1 egg
1 tsp vanilla extract
2 cups frozen blueberries

For the streusel:
1 cup cake four
1/2 cup butter
1/2 light brown sugar

Procedures:
1. Preheat oven to 375 degrees fahrenheit, then line muffin tins with paper cups.

2. Combine flour, sugar, baking powder, and salt in a medium bowl.

3. In a bowl, add buttermilk.

4. Add oil.

5. Add egg.

6. Add vanilla.

7. Mix well, then pour over the flour mixture.

8. Mix until combined.

9. Add the frozen blueberry.

10. Combine but don't over beat.

11. Using a spoon, scoop the batter over the muffin cups.

12. Make the streusel by combing the flour, butter, light brown sugar and mix until it resembles coarse meal.

13. Sprinkle top of each muffin with about 1 tbsp of streusel.

14. Bake for 20 to 22 minutes or until tops are semi-golden.

15. Allow to cool for 15 minutes before serving.
