The Big Coconut: Macaroni or Elbow Pasta


Macaroni comes from the Italian word "maccaroni" or "maccheroni". This is one of the different varieties of pasta shapes formed in narrow, shortly cut, c-shaped tubes. Originally, the name "macaroni" is not based on the shape but on the type of flour was used.

Macaroni is produced by extrusion, a process wherein the dry mix is placed in the large machine then liquid is added such as fat, sugar, dyes and water depending on what type of product will be made. Then, steam is injected so that the cooking will start. The process starts when the mix is pushed through the extruder, then through a die (a stencil-like sheet) where the product takes form and cut into its desired length. The cooking takes place when the mix passes through the extruder and makes contact to the heat. The machine produces about a ton per hour depending upon the design of the pasta.

Macaroni or Elbow Pasta is commonly used in making Macaroni and Cheese. It is also used in making Chicken Salad. In some countries, Elbow Pasta is used in soups.
