Chopping Board turns 1! : )
and what could be better than baking some muffins to celebrate Chopping Board's first birthday?
To celebrate this special day, I made this really delicious muffin that's really soft, moist, not too sweet, and most of all it's cute. Everyone can enjoy eating this muffin without worrying about sugary problems.
To celebrate this special day, I made this really delicious muffin that's really soft, moist, not too sweet, and most of all it's cute. Everyone can enjoy eating this muffin without worrying about sugary problems.
Ingredients:
2 2/3 cups all purpose flour
3 tbsp cocoa powder
2 1/2 tbsp baking powder
1 tsp baking soda
1 tsp salt
1 2/3 cups oil
1 2/3 cups oil
1 1/4 cups sugar
3 pcs eggs
2 tsp vanilla extract
2 tsp vinegar
1 cup milk
marshmallows, cut into desired shapes
For the icing:
1 cup sugar
1/2 cup egg whites
food coloring of you choice
Procedures:
1. Line muffin pans with cupcake liners. Set aside.
2. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt then set aside.
3. In a bowl of an electric mixer, add oil.
4. Add sugar.
5. Mix ingredients using an electric mixer on medium speed or you may use a wooden spoon.
6. Add eggs one at a time.
7. Add vanilla extract and vinegar then continue mixing on medium low speed.
8. Gradually add the dry ingredients to the batter alternately with the milk. Continue mixing until the mixture is well combined.
9. Scoop the batter into the muffin pans.
10. Bake for 20 minutes.
11. Cool cupcakes before frosting.
12. To make the icing, place sugar and egg in a double boiler. Whisk constantly until sugar is dissolved and mixture registers 140 F on an instant-read thermometer. Transfer bowl to an electric mixer and whisk on medium speed for 10 minutes until stiff glossy peaks form. Add a couple of drops of food coloring. Set aside until read to use.
13. Once the cupcakes are cooled, frost cupcakes with your desired style then decorate with marshmallows on top.
