Ingredients:
1 2/3 cups raisins
3 1/3 cups warm water
3 1/3 cups all purpose flour
1-2 tbsp baking powder
1 1/4 tsp baking soda
1 3/4 tsp salt
1 3/4 tsp cinnamon
6 pcs eggs
1 2/3 cups vegetable oil
1 1/4 cups brown sugar
5 cups shredded carrots
Procedures:
1. Combine raisins with warm water and soak for 15 minutes. Drain.
2. In a bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.
3. In a separate bowl add eggs.
5. Add brown sugar.
7. Combine the flour mixture with the egg mixture.
8. Add carrots and raisins.
9. Fold well until well combined.
10. Line muffin pan with cupcake liners.
11. Scoop the mixture into the muffin pan.
12. Bake for 30 minutes then let it cool before serving.
